Gallente ships (and drone boats in general) are good at plopping down drones and just orbiting/sitting there until everything is dead. It's perfect for semi-afk mission runners. However, the price for this style of play comes in terms of needing a large investment in drone skills put out "decent" DPS.
Caldari ships are shield tankers... so with a passive fit they rarely have to worry about "tanking" issues. More than that, missiles are just like drones... but even simpler. Simply load the proper missiles (i.e. the one the rat will be weak against), lock, and fire.
With the Amarr... with the exception of the Arbitrator and its variants, Amarr ships are thoroughbred gunboats. This means in order to put out good DPS numbers you need to do two things: 1. get adequate skills in gunnery and 2. learn how to use your guns properly (i.e. know both their strengths and weaknesses).
Amarr PvE setups I've seen typically use range to their advantage... coming into a mission at range and/or burning off to put distance between them and the rats. After that, it's a simple matter of picking off targets within range. Pro-tip: kill the frigates first as they have a tendency to scram and web you, thus preventing escape. After that, kill whatever you feel you can kill fastest and work your way through the mob.
If you have T2 pulse lasers you can use the 50% range bonus of Scorch crystals to your advantage. Make this an early goal in terms of your training as T2 lasers really add the extra "oomph" that Amarr ships need. Also, as said by others here, Amarr ships have a bit of problem in terms of what damage they deal; EM and Thermal. MOST rats will have Thermal damage set as a primary or secondary weakness... but some, like Angel rats, are quite strong against both. The only way to overcome this is by having good skills and employing "gank" style fits to put out enough DPS to overcome.
Donno, if I had to describe it, I'd just say that Amarr dont "feel" right. DPS feels low esp for all the disadvantages they carry with cap problems and staying stable, vs say caldari and gallente, but maybe there's just a playstyle to them I can't get use to, started a Minmatar alt to see if they can fit my playstyle better. I'm loving the caldari but dps just seems really weak in my abaddon.
Fly a Zealot with a proper fit, you'll be near top of damage list on killmails (pen15land ). Look at how many peoples were there and still I managed to get over 1k damage to #2 on the list 
Can't stand near a Sleipnir on damage though but that's a command ship... totally different game there
